The Path Chardonnay

Winemaker Notes:  This 2011 vintage is sweet and tart on the palate with flavors of key lime pie, lemon candy and bright stone fruit flavors with underlying notes of crème brûlée and buttered toast.  It’s an elegantly appealing Chardonnay that pairs well with rich shellfish dishes and lighter fare.

The Path Pinot Noir

Winemaker Notes:  This 2011 vintage is lush and fruity with flavors of strawberry and cherry.  It rounds out nicely with subtle smoky notes of cigar box and toasted cardamom.  Medium bodied, smooth and silky with restrained tannins and balanced acidity.  Exceptionally versatile food wine.

Recipe of the Month

Beemster Aged Beef Enchiladas

Ingredients (for 4 persons)

5 ounces Beemster Aged

14 ounces ground beef

1 ½ tablespoon taco seasoning

2 garlic cloves, finely chopped

2 cans (14 ounce size) chopped tomatoes

8 small flour tortillas (8 inches)

2 green onions, sliced into rings

½ cup sour cream

2 tablespoons fresh cilantro, coarsely chopped

 Preparation

Preheat the oven to 400 °F. Grate the cheese coarsely.
Without adding any oil, fry the ground beef in a frying pan until done.

Stir in 1 tablespoon taco seasoning, garlic and 1 can of chopped tomatoes and simmer a few minutes. Season with salt and pepper.

Empty the second can of chopped tomatoes into a bowl and stir in 1/2 tablespoon taco seasoning.

Place the flour tortillas on a plate or cutting board one by one and spoon a line of beef filling horizontally across the lower half of the tortilla.

Sprinkle with a few green onion rings and cheese, roll up into an enchilada and carefully arrange in the baking dish.
Top with the chopped tomatoes and sour cream and sprinkle with the rest of the cheese.

Place the dish in the oven and bake the enchiladas for 25-30 minutes until golden brown. Garnish with cilantro.

TIP: Delicious with an avocado salad.
